Ice Box Meyer Lemon Pie:
8 oz. Cream Cheese, Room Temp.
2 -14 oz. cans Sweetened Condensed Milk
3/4 oz. Meyer Lemon Juice
Premade Graham Cracker Crust Pie Shell

Using an electric mixer, cream the cream cheese slowly with a can each of the sweetened condensed milk. Slowly add in the lemon juice. Pour batter into the pie shell, cover, and refrigerate for a minimum of 12 hours before serving. (NOTE: To change the flavor, you can use virtually any citrus juice so long as it is tart.)
