Customizable Vegetarian Burrito Bowl Recipe
Ingredients:
For the Fajita:
* 1 large bell pepper (any color), sliced
* 1 large onion, sliced
* 1 tablespoon taco seasoning
* 1 tablespoon olive oil
For the Pico de Gallo:
* 1 small red onion, finely chopped
* 2 medium tomatoes, diced
* 1/4 cup fresh cilantro, chopped
* 2 tablespoons lime juice
* Salt and pepper to taste
For the Cilantro Lime Rice:
* 2 cups cooked white or brown rice
* 2 tablespoons lime juice
* 1/4 cup fresh cilantro, chopped
For the Paneer:
* 1 cup paneer, cubed
* 1 tablespoon olive oil (for sautéing)
* Salt and pepper to taste
For the Burrito Bowl:
* 1 cup boiled corn
* 1 cup cooked black beans
* 1 avocado, sliced
* 1 cup chopped lettuce
Toppings:
* Mexican cheese, Sour cream, Hot sauce or salsa, tortilla chips

Instructions:
Step 1: Make the Fajita Vegetables
* In a large skillet, heat 1 tablespoon of olive oil over medium heat.
* Add the sliced bell peppers and onions to the skillet.
* Sprinkle 1 tablespoon of taco seasoning over the vegetables.
* Cook, stirring occasionally, for about 5-7 minutes or until the vegetables are tender and slightly caramelized.
* Remove the skillet from heat and set the fajita vegetables aside.
Step 2: Prepare the Pico de Gallo
* In a medium bowl, combine the chopped onion, diced tomatoes, and chopped cilantro. Add 2 tablespoons of lime juice, salt, and pepper.
* Mix everything well and adjust the seasoning to taste.
Step 3: Prepare the Cilantro Lime Rice
* In a large mixing bowl, combine the cooked rice, 2 tablespoons of lime juice, and chopped cilantro.
* Toss gently to mix the flavors evenly and fluff the rice with a fork.
Step 4: Assemble the Burrito Bowl
* Start with a base of cilantro lime rice in your serving bowl.
* Add the fajita vegetables on top of the rice.
* Layer with boiled corn and cooked black beans.
* Arrange the sliced avocado and pico de gallo.
* Add chopped lettuce and the sautéed paneer.
* Top your burrito bowl with shredded cheese, sour cream, hot sauce, or jalapeño slices if desired.
