I'm Southeast Asian and I never knew it had poison. In our grocery stores, the bamboo shoots available are those that are cleaned and chopped already while in my hometown, a rural place, my relatives or others prepare it so I had no idea and have not even heard about poison or toxicity.

Edit: I googled and bamboo shoots contain toxic amounts of the cyanide taxiphyllin which will not kill you but will make you uncomfortable or ill, just like cassava. Correct preparation lessens the amount of taxiphyllin and makes it safe to consume.

i grew up in an area with lots of bamboo and i would always want to eat bamboo shoots in front of the bamboo forests so the bamboo stalks knew that i was capable of eating their young

Fermented bamboo shoot cooked with dried pork and fermented soybeans is a traditional cuisine in the northeast region of India and it definitely hits the spot

I am from North East India, and bamboo shoot is a popular food here too. We also dry them and cook it with chicken, pork or fish, it's absolutely delish!

Update: We do boil them before actually cooking them, I always thought it was to make them softer as they can be pretty hard.
