Today I show another technique for preserving olives all year round. This method is as easy as the others but different, don't worry the olives don't stay salty 😉
For this recipe I used:

Olives 500 g
Salt 60 + 60 g
Vinegar 1 glass
Water 1 glass

I tried it and it worked. Had half the harvest as you did but nevertheless turned out quite well. Most of the bitterness went away and they didn't taste very salty at all once they sat in the vinegar for a week. They taste quite different to olives you buy at a shop.

I m waiting to collect the same coloured olives and absolutley try this type of brine for olives, we are crushing green olives, changing daily water in 10 days 10 times then ready to eat in salty water in glass jars.

Will try this . Any specific type of vineger we should use ? Ive tried to cure olives before by puting them in salt water but they went slimy and i threw them away not kmowing what to do. On subject of the olive oil videos im sure the ammount of oil you get depends on the variety i have koroneiki olives which are specificaly for oil and they are full of oil compared to my other varietys . I think this would make a huge difference in oil quantity .

I've started to soak some raw black olives in plain water to remove the bitterness. I'm changing the water daily, keeping them in a dark cool place and notice some small bubbles like they are fermenting some. Is this normal? I plan to salt them after the bitterness is gone following another one of your videos. Any guidance would be helpful!

500 grams = 1.1 lb and 60 grams of salt = 3.5 tlsp.
