How easy would it be to try getting hired by a casino and cheat with a friend at poker?

I'm really really really stupid but eyes weren't. I saw the top three cards being controlled and the bottom 10 cards also. It was a stacked deal. But what gives with all red then all black? Even if sleight of hand is the most difficult, how. One missed shuffle and only one card ruins your trick. How do you know the thickness UNLESS YOU'VE CHEATED?
