Chicken Florentine Soup Recipe

My own personal recipe is comfort food all day! Hope you like it as much as my family does :)

Ingredients
• 1/2 cup butter • 1 small onion , chopped • 4 bulbs minced garlic • 1 cup flour • 1 tablespoon Jamaican curry powder • 2 packets of Goya Salad & Vegetable seasoning • 2 tablespoon shredded basil leaves • 1 tablespoon thyme • 1 tablespoon kosher salt • 1 tablespoon of fresh ground black pepper • 3-4 quarts chicken stock • 26 oz of crushed tomatoes • 4 cups cooked (boneless and skinless) chicken thighs , cubed (or shredded) • baby spinach • 1 cup heavy cream • cooked macaroni pasta as desired • additional veggies like carrots, celery, etc. as desired

Directions:
In a heavy bottomed, 5 quart saucepan over medium heat, melt butter. Add onions and cook until onions are tender, 2-5 minutes. Add flour slowly and then slowly add heavy cream until smooth and thick sauce forms.

Slowly stir chicken stock into butter/flour/cream mixture until sauce thins out. Now add, curry powder, garlic, pepper and basil. Cook 1 to 2 minutes.
Add crushed tomatoes and either the rest of your chicken stock or water until the soup is the consistency that you prefer.

Add 2 packets of Goya seasoning and thyme. Add any salt and additional pepper as needed.

Bring to a boil and cook several minutes while preparing chicken.

CHICKEN:
Your chicken should have been seasoned however you like it, overnight.
Heat a medium pan to medium high heat and place your thighs in the pan to seer (should be about 5 minutes each side).
Remove from heat and let rest for 5 minutes then cut into bite sized pieces.
Add chicken to your soup and let your soup simmer on medium low heat for 20 minutes with a top on the pot.

While the soup is simmering, boil some macaroni pasta (use your best judgement based on the amount of servings, about a cup per person) and set aside.

Remove soup from heat. Place baby spinach at the bottom of the soup bowls, then layer with cooked macaroni that you prepared (about a cup). Spoon in your soup and top with parmesan cheese. Serve immediately.
