If I can find the references again I'll post an edit with them. However, years ago I read a book on castle building that explained a few things you didn't cover fully.

1. Earthen castles were often later replaced with wood castles and then replaced with stonework when they had the time and materials. Many castles were also built over caves and the caves were used as the lower levels for storage.

2. While most staircases didn't matter in which way they went, many were deliberately built in a specific way for defensive purposes based on how the owner intended to conduct a defence of that part of the castle should the walls be breached. Some were done to favour the swordsman or shieldman defending as he backed up the stairs and some were done to favour the swordsman or shieldman as he backed down the stairs. This difference was needed as an enemy could breech an outer wall by climbing to take the wall and then work their way down the stairs while the inner buildings had to be breeched at the ground level and they work their way up. In the book I read they referenced some source records from the period.

Living in the UK I've visited a lot of castles and castle ruins, they were almost always part of our holidays (plus we lived by Norwich castle) so I knew most of these, but not all.

The fractured and ruined castles that were built that way purposely certainly throws a wrench into a lot of historical research about castles. It adds a plausible deniability to the construction of any castle or ruin - very strange and interesting.

Anyone traveling through Europe wanting to see a bona fide medieval castle, I recommend Beersel castle in Brussels Belgium. A beaut!

It has a complete wall, moat and draw bridge, three towers, and torture chamber. The works. Saw it at least twice while living in Belgium as a teen. The kind of castle that fits our movie imaginations of knights and sieges, rescues and dragons. While not an expert on the topic, it was my favorite castle while there. I found that palaces are sometimes billed as 'castles.' They are not. Palaces are extremely nice, and amazingly modern and clean. Not to mention spacious and luxurious. Also worth the tour, as long as you keep your head on your shoulders about the difference.

There's a great documentary series on YouTube called Secrets of the Castle. My favourite fact is that construction work was done using primitive cranes powered by human-sized hamster wheels.
