The defensive strategy for sea kings and hydras is good, but it wont deal enough damge depending on the fruit that you use. And the defensive strategy works better when you are not alone in a boss, so it's better for you to use fruits that can absolutely destroy everything in terms of damage.

The best fruits for high damage and damage per second is:
Magma AWK
Dark AWK (All of the awakened skills are pretty much trash, but the last awakened skill does more than 100k damage in seconds if it hits an npc with a huge hitbox like the hydra or sea king, which is why the awk fruit is good)
Buddha AWK (Because the fruit has a click when awakened, and it gives you a passive of 90% defense)
Gravity AWK
Ice AWK
Flame AWK
Light AWK (It's best to use this fruit with a high damaging sword)
Venom AWK
Snow AWK
Dough AWK (Again, it's best to use the fruit with a sword)
Rumble fruit
Toy fruit
