Cold Smoked Arctic Char | A-Maze-N Pellet Smoker

I've cold smoked salmon with the A-Maze-N pellet smoker before, but this time I thought I'd try some Arctic Char. It looks similar to salmon, but has more of a fishy smell to it.

I jazzed up the cure to add a little more flavour this time. Here's the details:
1 cup kosher salt
1 cup brown sugar
1 tbsp red pepper flakes
1 tbsp black pepper

Coat the bottom of a glass dish with about 1/3 of the cure mixture, set the fish in and then pour the rest of the cure over top, making sure to completely cover the fish. I then let it rest overnight in the fridge.

The next day, I took it out and gave it a good rinse, making sure to get as much of the saltiness out as possible.

I lit the pellets, which did not want to stay lit for the first half of the cook, so I switched to a different brand and they worked perfectly.

thanks for the video, In case it helps... for salmon soaking in water for 30 min after brining is recommended. Then pat dry. No salty taste.

Hi Chris, You need to blink now and then. LOL! As far as the pellet problem goes, I put mine in my AMNPS tray, then dry them before I light them. Seems to help keep them going.
The smoked Char looks delicious! I use a bit different cure for my fish, 1 cuppa salt, 4 cups of brown sugar. Much less saltyness. You might try that.
Any pepper I add as I prep the racks for the smoker. I use an electric.

I’ve never had cold smoked fish. I bought a smoke tube a year ago, haven’t tried it yet. I was thinking about doing cheese first to try it out. The weather has been horrible here. It storms almost everyday or it’s too miserable to be outside. Thanks for sharing😃

Hey Chris, that looks really cool.Is there any temp you need on the grill? And is is possible to do with wood chips in something other than the basket? Hah sorry for the questions.
