Cold Smoked Arctic Char | A-Maze-N Pellet Smoker

I've cold smoked salmon with the A-Maze-N pellet smoker before, but this time I thought I'd try some Arctic Char. It looks similar to salmon, but has more of a fishy smell to it.
I jazzed up the cure to add a little more flavour this time. Here's the details:
1 cup kosher salt
1 cup brown sugar
1 tbsp red pepper flakes
1 tbsp black pepper
Coat the bottom of a glass dish with about 1/3 of the cure mixture, set the fish in and then pour the rest of the cure over top, making sure to completely cover the fish. I then let it rest overnight in the fridge.
The next day, I took it out and gave it a good rinse, making sure to get as much of the saltiness out as possible.
I lit the pellets, which did not want to stay lit for the first half of the cook, so I switched to a different brand and they worked perfectly.
