YOU’LL NEED
-1 ¼ lbs sweet potatoes, cubed
-1 large red onion, cubed
-4 T extra virgin olive oil, divided
-2 tsp chili powder
-1 tsp smoked paprika
-½ tsp kosher salt
-1 ½ c cooked quinoa (from ½ c dry)
-Zest & juice of 2 lime
-2 tsp maple syrup
-1 clove garlic, minced
-1 can reduced sodium black beans, rinsed
-1 large bell pepper, diced
-¾ c chopped cilantro

She said that it’s sweet potatoes rather but it looks more like yams, because sweet potato isn’t that color. Looks more like yams.
