that's exactly how i fight them in total war games - strong infantry line preferably with pikes or halberds and tons of good long range archers.

Easier method : just choose a faction west of the map, so that you won't have to fight them

Actually the Song dynasty of China did pretty well, they were one of the first factions who encounter the Mongols and the last to fall to them. Militarily the Song avoided open battle with the Mongols and use fortifications instead, as they lack cavalry due to losing northern China to the Jin century ago. However, corrupted governance and incapable rulers finally doomed the empire.

That's actually really good advises expecially coming from a priest
That's pretty much how i got them in medieval total war them after loosing my french knights in conventionnal warfare

When they first arrived i got many balistas on greats hills before their incoming army
I was quite horrified when they outreached the balistas uphills with their composite bows

When we tried to get in range they retreated and shot again and again at our army uphill
There was no other choice than to charge downhill, the fearsome french knights heading first to cover the army of spearmen and squirmisher

Needless to say it was a massacre
The glorious charge of knights down the hill got mostly evaded by retreating cavalry archers and they were shot down by hails of arrows again and again, the infantry followed and got surrounded by mounted archers when the heavy knights were occupied trying to get the fleeing mongols

But castles and cities resisted a great deal making them pay for every inch of rock
At prague we finally stopped them but our armies were much diferent from the start

Mostly heavy armored lancers with great shields and spears, arbalesters and other squirmishers tactically engaging mongols from safety
And knights only used to make mongols fuck off from close range when needed

Reconquering the lost lands was a slugfeast but easy from there, the frankish empire prevailed once again against the barbarians

This was very useful, damned horse archers has been circling and following me pestering my car with arrows to work today. I'd be sure to apply these in live combat situations tomorrow.

Terrain is important: Vietnam (Forests), Mamluks (Deserts), Japan (Oceans), and India (hard to get into) also hurt the Mongols' chances.
