You can take an old computer and use it as a Linux server, without any GUI at all. You'll learn a lot.

At this point since Slackware has achieved 15 Alpha1 status and approaches the next stable release I'd recommend installing Slackware Current. When Slackware Stable 15 is released just switch mirrors to the stable branch. I've been running Slackware Current for about 2 years now and haven't had issues.
I will say keep an eye on the changelog in case you need to be aware of notes before updating.
KDE Plasma is available now with Slackware Current and also XFCE 4.16.
To update I also use slackpkg install-new before slackpkg upgrade-all in case new packages are added officially .

In trying to configure slapt-get, I keep getting the following message: cannot execute binary file: Exec. format error. I gave it up.
