Soft Potato Buns Recipe!🍔

✨Ingredients:
-2 3/4 cups bread flour (330g)
-1/3 cup cooked potatoes (3.5 ounces)
-2 Tbsp sugar (30g)
-2 tsp active dry yeast
-1 tsp salt
-1/3 cup+1 Tbsp warm milk (90ml)
-1/3 cup warm water (75ml)
-2 egg yolks
-4 Tbsp unsalted butter (1/2 stick)
✨Instructions:
1. Boil two russet potatoes until fork tender then mash or send through potato ricer and set aside.
2. Combine flour, sugar, salt in the bowl of a stand mixer and whisk together. Add measured room temperature potatoes and work into flour until well incorporated.
3. Combine warm milk and water (90-100F) then add yeast to milk mixture, stir and let bloom for 5-7 minutes. Once bloomed pour over flour mixture and mix on low using the dough hook of a stand mixer.
4. Once the dough begins to come together add egg yolks and continue mixing until incorporated, about 1-2 minutes. Once the egg yolks have been worked in begin to add 1 tablespoon of softened butter at a time mixing on medium adding in another after each tablespoon has been fully kneaded into the dough. Should take a total of 4-6 minutes.
5. Once all the butter is kneaded into the dough it should be smooth and tacky. Add to a greased bowl, cover and let proof until doubled in size(1-1 1/2 hr).
6. Punch down your dough and divide into 7-8 equal pieces( 85-100g each) and shape your buns before covering and letting proof for an additional 1 hour.
7. Uncover and dust with potato starch then bake at 350F for 22-25 minut
