Painda ( Sobat - Penda ) Recipe | D.I. Khan And Bannu Traditional Dish
Painda also know as Sobat or peinda is really famous in southern part of Khayber Pakhtunkhwa province of Pakistan especially in District of D.I.Khan, Bannu and Lakki Marwat. In this dish break is bread Down and get Soaked in the gravy.
You can say that it's the Pakistani version of famous Middle eastern dish "Tharid" ( ثرید ).
This dish is basically consists of 2 main things
1. Roti ( Bread )-:- This Roti is Little bit different than the usual Roti we make it home . In Sobat or Painda Roti ia really think and really large in size .The people in the southern part of Khayber Pakhtunkhwa call it " Pasti " . They usually make it on Large Tawa or a metal drum which is cut in half.
2. And the Gravy:- Gravy is runny in consistency as compared to normal gravy or curry. And also it's less spicy
Ingredients:
• Oil - 1/2 Cup
• Butter - 4 Tbsp
• Chopped Onion - 2 Medium Size
• Chopped Tomatoes - 2 Large Size
• Green Chilies - 4/5
• Salt - 1 Tbsp
• Chicken - 1.5 Kg
• White Vinegar - 3 Tbsp
• Finely Chopped - 3 Tbsp
• Red Chili Powder - 1 Tbsp
• Garam Masala Powder - 2 Tbsp
• Coriander Powder - 1 Tbsp
• Black Pepper Powder - 1 Tsp
• Turmeric Powder - 1/2 Tsp
• Lemon Juice - 1 Tbsp
• Water - 6 Cups
• Fenugreek - 1/4 Tsp
• Chopped Green Coriander - 1/4 Cup
Ingredients for Roti:
• Wheat Flour - 2 Cups
• All-purpose Flour - 2 Cups
• Salt - 1 Tbsp
• Water - as Required
Method:-
• Add oil and butter to a cooking pot
• Heat it up
• Add Onion and fry Until Turn Golden Brown
• Add Tomatoes and Green Chilies
• Mix Well
• Add salt and mix Well
• Cover and cook on Low Heat for 3-5 Minutes
• Add Chicken , white Vinegar and finely Chopped Garlic
• Cook on High Heat Until color changes
• Add red Chili Powder, Garam Masala Powder, Coriander Powder, black Pepper Powder, turmeric Powder and Lemon Juice
• Mix Well
• Cook Until oil is Separated
• Cover and cook for 5 Minutes on Low Heat
• Add water ,fenugreek and Chopped Green Coriander
• Cover and cook for 10 Minutes on high heat
• Separate oil from the top and save it for later
Preparation of roti:
• In a large bowl add All-purpose Flour, wheat Flour and salt
• Mix Well
• Gradually add Water and Knead Until Smooth
• Rest for Minimum 30 minutes
• Take a small portion of dough and roll it
• Cook it on tawa
Assembling:
• Break Down roti in a Large clay plate
• Now pour of the gravy
• Crush with metal glass
• Add Chicken on top
• Also pour off the gravy oil we saved for later
• Now add Chopped Green Coriander
• Sprinkle black Pepper Powder, Garam Masala Powder and chaat Masala
• Cover for 5 Minutes with aluminum foil or clinic foil
• Delicious paida is ready
