Thai coconut peanut sauce Buddha bowl with rice, tofu and vegetables. This rich, creamy sauce makes great leftovers and pairs well with rice, pasta or potatoes. Add sriracha or your favorite hot sauce for extra heat!!!

Ingredients:
2 tablespoons vegetable oil
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
2 tablespoons Thai red curry paste
3/4 cup smooth peanut butter
1 cup canned unsweetened coconut milk
1 bouillon cube
1/2 cup (or more) water
1 tablespoon sugar
1 tablespoon soy sauce
1/2 teaspoon freshly ground black pepper
2 1/2 tablespoons fresh lime juice
sriracha to taste
