Planning your holiday meal? You can never go wrong with honey roasted sweet potatoes as a side dish. Jacques Pépin scores his potatoes with a small knife before they go in the oven. This helps them cook faster and also creates little divots for the butter and honey to drip into.

This was my mothers favorite way to eat sweet potato. We often had them baked like that but, she used light brown sugar rather then honey. Always salt and fresh ground pepper. We never cut the flat spot or, the hash marks, and From now on, that will be my standard method. I can not wait to have my sisters over for dinner and present them these potato's, sitting nice and straight on the plate and with melted butter and sugar running all over the inside of the potato. My mom did use honey on acorn squash and butternut squash when they were in season, baked just like you did the potato minus the flat spot .. That flat cut is such a brilliant idea for the bottom of the veg. God bless you and thank you for all your cooking demo's that you are doing for us.

I do something like this with a potato, but I bake it whole, first. Then, after it cools a bit, I cut it in half, do the crosswise cuts and fry the cut halves in butter on a skillet until brown. Then add salt, pepper, more butter, cheese, etc.
