Blue margarita:
1oz fresh lime juice (30ml)
1/2oz agave syrup (15ml)
3/4oz blue curacao (22ml)
1.5oz tequila (45ml)
Garnish: salt rim, lime wedge

I made this as a side dish for a neighborhood Cinco de Mayo party. It was excellent. I let the rice cook as you suggested and then let it set in the pan on top of the stove with the heat off. Although my rice was a little overdone the flavor was great and everybody loved it.
