NACHOS CON QUESO Y GUACAMOLE RECIPE | Game Day Queso Nachos

INGREDIENTS:

PICO DE GALLO / SALSA:
3 roughly diced medium ripe tomatoes
1 large seeded finely diced jalapeno
1/4 cup finely diced red onions
1-2 Tbsp. chopped parsley or cilantro
1/8 tsp. Kosher salt
1/8 tsp. black pepper
juice of one lime
zest of one lime
*Mix above ingredients and refrigerate for 1-2 hours

How to Make Fresh Homemade Guacamole - Easy Guacamole Recipe:

INGREDIENTS:
2 ripe avocados
1 seeded and finely chopped plum tomato
1/2 seeded and finely chopped small jalapeno
1 finely chopped garden onion
juice of 1/2 to 1 lime - about 1-2 tbsp.
1/4 tsp. garlic powder
salt to taste
*Mix above ingredients and refrigerate for 1-2 hours

QUESO SAUCE:
2 Tbsp. butter
2 Tbsp. flour
1 1/2-2 cup half and half
sprinkle of cayenne pepper
salt and pepper to taste
8 oz. grated Mexican blend cheese

*In a sauce pan on medium heat add butter and flour. Cook and stir for 2 minutes
until butter melted and incorporated with the flour and then cook another minute.
Slowly add half and half. Whisk until sauce thickens. Add cayenne pepper and stir.
Turn off heat. Add cheese and stir until melted. You can add a little half and half
to thin out if needed.

OTHER INGREDIENTS:
Tortilla chips
Gaucalmole
Sour cream
chopped green onions

Nachos are a family favorite! I do like the idea of the homemade queso and the guac and pico on top. Totally different from the usual beans and cheese recipe.

My cheese sauce gets grainy sometimes- what am I doing wrong? Also, what brand of tortilla chips are you using? They look nice and thick, would be great for chilaquiles.
