A Very Beany Veggie Soup

I call this the " Clean out the fridge and of the pantry remains Soup " in my head. A perfect recipe to use all those bits and bobs of produce laying around in the crisper. That half a green pepper, the once crispy green 3 stalks of celery turning soft making their way to a yellow tint, the sad lonely carrot hanging out by itself ....etc etc.
Substitute whatever veggies suit your fancy but do not do without the base of onions + garlic . It sets the foundation for the robustness of the soup.
Serve with a sprinkle of parmesan if you want.
