How to make pambazos (Mexican salsa dipped sandwiches)

Pambazo (Mexican salsa fried sandwiches) these were some delicious tortas. I been meaning to give these a go and it did not disappoint. First roast your ingredients for the salsa, then cover them in water and boil until soft. Next boil your potatoes until soft, then cook your chorizo, add half a onion thinly sliced then your potatoes. Who’s down for this?

1 large white onion
Kosher salt, to taste
12 dried guajillo chiles, stemmed and seeded
2 cloves garlic

You need telera bread
2 lbs beef chorizo casings removed
4 small russet potatoes cubed

Garnish
Queso fresco
Crema mexicana
Lettuce
Jalapeños
Refrigerator beans

I love this... My first real Mexican taco was in Fontana, Tacos Jalisco. My favorite and go to when I wished for it. The ahogadas with the carnitas threw me over the edge with flavor and heat.
