Voskos Cauli-Mashed Potatoes
Ingredients:
1 onion, chopped
2 carrots, chopped
2 celery, chopped
2 stocks cauliflower, chopped
1 Large potato, peeled and cubed
½ cup chicken broth
Season with salt, pepper and garlic powder
Handful of chopped chives
½ cup cheddar cheese, graded
½ cup Voskos plain Greek yogurt
Directions:
Using a soup pot turn stove burner on medium, coat the bottom of the pan with olive oil. Add the onion, carrots and celery. Sweat veggies until tender. About 7 minutes. Add the cauliflower and potatoes and season with salt, pepper and garlic. Continue to sauté for another 10 minutes. Add ½ cup of chicken broth, place lid on and simmer for another 10 minutes. Using an immersion blender, puree the pot until smooth. Add the cheese, chives and Voskos plain Greek yogurt. Stir until combined. Place in a serving dish and top with cheese and chives for more décor. Serve hot.
