Wow, I just made these and they are incredibly delicious! I love the unexpected flavor melding that really works (was a bit nervous using 2 tsps. of ginger, but the flavor is amazingly balanced and so good). Also the texture is perfect, a little crisp at the edges and soft and chewy inside. This recipe is another winner thanks to your creative culinary talents. Thank you very much! (P.S. I used Bob’s Red Mill gluten free flour and the cookies came out perfect!)
