Papas en salsa verde for dinner! I used a recipe from my ebook, but feel free to use your favorite salsa. Mine’s a roasted onion creamy avocado salsa, which I like to cook after blending. I start by cleaning and boiling the potatoes until tender, then roasting them in oil until they’re golden brown. I finish them off with vegan cheese, fresh onions, and tomatoes. Simple, yet so delicious.
