Mochi is a dough, that's what the entire sweet is lol. The rice is basically pounded into a gloop which is how mochi gets its softness. You can make a cheater version at home using glutinous rice flour and the microwave. Sometimes they'll be filled like the ones you got, other times the mochi itself will be flavored during the process of being made so it'll just be all mochi throughout. There is also ice cream mochi you can find in the freezer aisel!

daifuku is one of my favorite treats! it's mochi generally filled with red bean paste and it is SO GOOD but your hands get all covered in flour lol.

Mochi is the steamed pounded rice dough, and it makes the exterior of the treat! The inside is not mochi, the outside is. Filled mochi cakes like this are called daifuku (citation needed, daifuku might only include the ones filled with red bean paste, someone with more knowledge feel free to correct me). Sometimes mochi is made savory too, but it's usually sweet.

Ice cream mochi can be pretty hit or miss depending on the brand. Bubbie's mochi is the best I've found.
