Im surprised that other afghans in the comments don't eat eggs like this. I was just going to suggest that the potatoes are supposed to fry until the skin gets cooked first before adding in the other ingredients, otherwise everything else's turn to mush by the time they get cooked. And the onions should fully turn golden brown before adding in tomatoes or they won't crisp properly.

I cooked this twice already. Im Indian and my family loves this. We eat this for breakfast with bread or chapati and you really don’t feel hungry for a long time cause it’s so filling!

this looks similar to shakshouka but it also looks different enough to be its own dish inspired by it.

The concept of adding the eggs at the end is fairly clever.

I do believe shakshouka has about 15 seperate recipes that all stem from 1 base recipe. as is common with provincial recipes.

I'll have to give this a try though.

That’s not an omelette - it’s Shakshouka with a little added potatoes.But, I’ll try it for my husband. It looks good and he always asks for potatoes on the side. 🤷🏼‍♀️
