but i have to say your harissa is very watery in consistency the harissa we are used to is more of a paste, i mean harissa literally means paste in arabic lol.

Harissa is from Tunisia stop calling it « North African » even UNESCO recognized it as only Tunisian

It's even better when you use the right peppers (Baklouti).

Not being snarky. I know full well that the only way most people can get Baklouti Peppers is to grow them themselves (like I do). Still, it rates mentioning. Respect tradition.

Also, I don't trust your fermentation-skillz. Way too much head space and you advise people to stir it every day -- which sorta negates the whole purpose of fermentation. And by repeatedly opening it, you risk contamination. Better to get a jar with a fermentation lock (or a Fido) and forget it for a month.

I do commend you for going to extra step. Fermentation is well worth the effort and other Harissa recipes here leave it out entirely. They have no idea what they're missing.
