#KetoCrustlessBlueberryPie Recipe
1 cup almond Flour
1/4 cup Stevia
1 stick melted unsalted butter
2 eggs
11/2 tsp vanilla (optional)
1 tsp cinnamon
1/8 tsp sea salt (omit if using salted butter)
2 1/4 cup frozen Blueberries
1 Tsp Stevia for topping
To a mixing bowl add almond flour, stevia, cinnamon and salt, add 1 stick of melted butter and 2 eggs mix. Add 1 1/2 tsp vanilla (optional) add 2 1/4 cup frozen blueberries. Fold I to batter gently. Pour into greased pie pan. Sprinkle top with 1 Tsp Stevia. Bake at 350 for 50-60 min.

After chatting with a subscriber, I lowered the Stevia in this recipe down to 1/4 cup. Also the salt is Sea salt. Thanks

That looks really good. I was shocked at how much stevia you used. One cup sugar in my conversion is one third the amount. I would change out the butter for plant based or coconut oil to make it vegan. I will be making this when it’s cold. Thank you so much.

The blueberry dessert looked delish! I love love Blueberry. There are a lot of blueberry farms around Benton & Washington counties here. I didn’t get out this yr to pick any and I should have sent son out to get me a few gallons to put in the freezer. Yrs past I’ve always canned them with no sugar. All my canning things are in storage and since my health went down this past year, I would need a little help to get it all done. Canning fruit is so easy. I had a friend Bless me with a case of beautiful tomatoes. I got them all blanched, peeled and bagged for the freezer. Ended up with 3 gallons minus some to make a fresh pot of tomato soup, along with some grilled cheese sandwiches the next day. Oh and I was eating some as I was peeling them. They were meaty and so sweet. Thanks for sharing your recipe, I bake with the almond flour mostly. Keto Connect just shared a coconut cake made with coconut flour, think I will try that one too. Yawl have a great time there! 👍😁

Love the collapsible measuring cup! We are trying to get back to keto, but keep tripping over excuses. You should try Redmond’s Real Salt. So much better than table salt and it comes from an ancient salt lake in Utah.
