LEMON POPPY SEED MUFFINS | VEGAN

Muffins are with no doubt one of my favorite sweets to make. Especially this one – sweet but lemony at the same time, with nice crunch coming from poppy seeds. When I feel like some guilty pleasure and have spare 40 minutes in the morning - this is my go to recipe. They go perfectly well with hot cup of coffee or if you like it more – hot chocolate.

Lemons are my favorite to cook with. Especially to make pastas. I think most people don't even think to zest them. Like the flax thing you did. I bet that fresh vanilla and the finished product smelled so good.

i just don't see people using fresh vanilla bean, that was a nostalgic moment, for me. can the poppy seeds be substituted.(little known fact: if a person is in the u.s. military, they can't eat them, because they show up as "opiate" usage on urinalysis). thank you for this recipe, and demonstration, chef chris.
