When you are haunted by chive, spring onion, scallion, leek, you know what to do.
💛Ingredients:
-Chive Oil:
Leek
Spring onion
Scallion (honestly I still can't tell the difference😅)
Onion
Cinnamon stick
Sichuan peppercorn
Bay leaf
Oil
Light soy sauce 4 tpsb (adjust by this ratio)
Dark soy sauce 2 tpsb
Oyster sauce 2tpsb
Sugar 2tpsb

-Noodle:
Flour 300g
Warm water 160g
Salt 10g

-Mince Topping:
Minced pork
Fresh chilli
Garlic
Spring onion
Light soy sauce
Chilli Bean paste

💚Steps:
1. Fry the white parts of leek/chives first in cold oil, with chopped onion and dry spices, until they turn golden brown, add in the green bit of chives/spring onion, fry in medium low fire until they turn golden brown, drain the oil out and add in the sauces.
2.Mix warm water with salt, then add it into flour, knead it into a dough and let it rest for 20min, roll it out flat sprinkle with flour to prevent sticking and cut into the width you like, drop in boiling water for about 3-4 min.
3.Pan fry the mince until brown, add in the spices.
4.Drizzle chive oil with sauce on the noodle, top up with mince and then some of those fried chives.

💖The chewy handmade noodle are soaked in chive oil, fried chives give a little bit sweet taste, just pure HEAVEN!!💖
