MEMORIES OF MALTA ~ ŹEPPOLI (St. Joseph Day Filled Pastries)

Показать описание
Źeppoli are a traditional sweet choux pastry filled with a ricotta mixture slightly sweetened with yummy additions. These pastries are usually served in March to celebrate the Feast of St. Joseph, however, I love them year round!
I encourage you to try them, as they are easy to make, but easier to impress! They are surprising light, and I bet 1 will not be enough!

YOU NEED:
250 ml water
1/2 cup butter
125 g flour
1 tbsp. sugar
3 eggs
FOR FILLING:
300 g ricotta cheese
100 g candied peel
75 g sugar
100 g roasted blanched slivered almonds
100 g or so of chopped dark chocolate {approx. 1 large chocolate bar)
FOR GARNISH:
drizzle of honey
finely chopped walnuts, or almonds, pecans, pistachios, etc.

I know I would love these! The comment about your clean countertop made me laugh. I remember getting a comment years ago where someone was asking me how I cleaned my countertop (because I was rolling pastry on it). I answered "soap and water". She thought I was absolutely disgusting to let things touch my countertops and that I should use some kind of board to roll my pastry on. I answered "How do you clean the board? With soap and water? "
