To bookend our series on preservatives, I wanted to learn more about the complex process that goes into making the fresh produce we eat everyday available and the challenge it is to keep shelves stocked with perishable foods year round. This also makes a good lead in to another project I’ve been working on for the past few months, but more on that later.

As a consumer and as someone who lives alone I find it very difficult not to waste. There are so many things i can't buy in small enough portion locally. For examples no one around me sells a half loaves of bread or fresh bread that inst expensive. So unless i have bread with almost every meal for 2 weeks straight there is always waste. This goes for a lot of items not just bread.

I'm glad these few people you interviewed are working to prevent food waste. Even ignoring the consumer, food waste is an atrocious problem in the U.S.

The town I live in (Plant City) grows strawberries but in the stores I see California berries most often. I have noticed that "Fresh" California berries don't taste as good as the local berries that only show up every few weeks a month. I think it's because the local berries are out of the field and onto the shelf in a few days where as the Cali berries are a week or more old before they get to the shelves.
