The problem with the Caesar cipher is that the number of possibilities only scales with the size of the char set, meaning that even if you use the whole of the ASCII charset (128 values or 256 with extended ASCII, including non-visible characters, which you might exclude), you can just have a computer try *every* possibility, and show samples to humans, who can say "yeah, that looks legit", or not. Or you could set up the program to compare against a dictionary as well. The Caesar cipher is so weak that you don't even need to use statistics on it (although it's cool to do it anyway).
