Last round, my efforts to recreate the fabled McDonald's Szechuan Sauce were wild, flailing shots in the dark, pathetic and meager attempts to recreate a long-lost condiment out of scanty information and back-alley sources. But now, thanks to a very kind man named David Wasman, I have procured a sample of the genuine article. Follow along this week as we make a rendition of Szechuan Sauce near-identical to the Mulan-inspired goop from 1998. And make some wannabe Chicken McNuggets while we're at it.

Here you go guys, I took the time to write down the steps he did.
1/2 cup each of:
Water
White Vinegar
White Sugar
And Soy Sauce
1 tsp. of Apple Cider Vinegar
1/2 tsp. of Sesame Seed Oil
1/4 tsp. each of:
Garlic Powder
Onion Powder
and Ground ginger
a little scoop of yeast extract (marmite)
Some dextrose (Corn syrup)
And a little ground black pepper

After removing 1/4 cup of sauce
add 2 tablespoons of corn starch and add
it back to the main sauce.
Do the same thing with a teaspoon of xanthan gum,
and strain it while putting it back in. (slightly optional, just a thickener)
Keep whisking on medium heat until it forms a sauce like goo.
Strain cover and cool, and you are finished!

1/8 - 1/4 Cup White Vinegar (edited)
1/2 Cup White Sugar
1/2 Cup Soy Sauce (Kikoman)
1 Tbsp Apple Cider Vinegar
1/2 tsp Sesame Oil
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Ground Ginger
~ 1 tsp Marmite
~ 2 tbsp Corn Syrup
~ 1/2 tbsp Black pepper
2 Tbsp Corn Starch
1 tsp Xanthan Gum

As an OG subscriber I am still so in love with this channel and the quality and just overall vision you have for it. My one and only thing I miss...is that damn intro. "Baby I hear the blues a callin'" - like it just put me in the fucking mood to watching bingeing with babish.
