Pork and Peanut Dragon Noodles

Noodles are always a savvy choice when pondering your next meal. They’re infinitely customizable and easily take on the flavor of your dish. That’s why these pork and peanut dragon noodles, inspired by Budget Bytes, are so, so good. They soak up the flavor of the dragon sauce, which pairs well with your pork, peanuts, and fresh vegetables. It’s like noodles were always meant to be this way.
First, heat and separate your noodles. Yakisoba noodles work well, but you can sub two packages of regular ramen noodles. Next, create the dragon sauce, which is super easy: It calls for equal amounts of chili garlic sauce, soy sauce, and brown sugar. Combine those ingredients well and your sauce is done.

For the pork, you can use either half a pound of ground pork or grind boneless pork chops yourself. Grinding your own meat is surprisingly straightforward and simple. Partially freeze your pork chops, then cut them into three or four chunks each. Pop them in your food processor and pulse on and off until it resembles ground beef.

Cook the ground pork like you’d brown ground beef. However, before the pork is completely browned, toss in some chopped red bell pepper and scallions and continue cooking for a bit.

Next, add your prepared dragon sauce and chopped peanuts to your cooked pork and continue cooking until the sauce is reduced by about half. Finally, add your cooked noodles: toss to coat them completely. Top the pork and noodles with extra scallions just before serving.

Pork and peanut dragon noodles work well as a main dish, especially if you pair it with a milder side dish or cool salad to fully round out the meal. You could also easily double (or triple) this recipe for your next potluck for a unique addition to the spread.
