I love this time of year, the holidays are just around the corner. We always enjoy having family or friends coming over to visit and spending a few days with us. I like to bring out my prettiest dishes and breakfast is always a fun time and that's because I fix easy breakfast meals so I can enjoy our company. A Frittata is always on top of my list of choices because it's so easy to put together and because there are so many different ways of making it. Frittatas are delicious when they're hot or cold, and they are perfect anytime of the day and they freeze so well. I hope you give this recipe a try. ❤️

INGREDIENTS _________________
2 Tbsp Light Olive oil (or your favorite)
1 Heaping C. Small diced Potatoe (1 med gold)
6 oz. Chorizo
1/2 C. Finely chopped onions
1/4 C. Finely chopped Orange Bell Pepper
1 Lrg Finely chopped Jalapeño (optional)
Pepper as needed
1/2 tsp Garlic powder
8 XLrg Eggs
1/2 C. Water
Salt as needed
Pepper as needed
_________TOPPING ____________
1/2 C. Diced Tomatoes
Chopped Cilantro as needed
About 1 C. Freshly grated Monterrey Jack Cheese (Or your favorite melting cheese)

● Once you pour your eggs, cover and cook on very low setting till it no longer jiggles and eggs are no longer wet.

My dad always made scrambled eggs with water, and they were the best eggs ever! We always loved it when dad made the eggs. Lol. I sure do miss him.

The perfect recipe as the temperatures start to come down and company comes over. This my dear Rachel is one of our favorite weekend breakfasts that we'll eat as breakfast, brunch, lunch or dinner. What you've taught me today is that I can actually finish cooking it on the stovetop. I usually start on the stove and throw it into the oven. Thank you for this valuable information! Hi Rachel! This looks delicious! Can’t wait to make it for my family. I will be putting this on a tortilla! My husband loves salsa and puts it on everything. It’s sort of disgusting when I see him put salsa on biscuits, so I’ll just use tortillas! lol We love all your recipes and we are so happy watching you on UTube and our favorite part is the taste test! I think I made this in the wrong pan. I think it was too heavy. The potato wanted to stick instantly 😢. It took 3xs longer on my low and covered, so about 40 minutes. I had to take the lid off for a little to get the center evaporated. I think my lid was adding condensation to the center of the eggs. I did not have anything but Brown N serve Sausage links. I just chopped them up (still frozen) and added in place of the bacon/sausage and shredded chedder cheese. Even with all these errors, and slight differences, it turned out great. It was a hit. Thank you. LOVE watching you. I am always hungry and inspired after your videos. I love how you remind us that we can use what we have on hand. Example, if we don't have orange peppers use what we have. You remind us that cooking can still be fun and enjoy what we have. That we don't need to make special grocery trips when we all can't afford that. ❤ hope that makes sense. 😊❤👍
