Hi Guga and Angel. I was a manager for White Castle for about 2 years. Excellent job with great benefits. I only seen 4 things that you could have done better. The frozen ones don't have it but the regular white castles and cheeseburgers come with a single pickle. Thinner patties, more water on your griddle, and before you put the bottom bun on the patty, did you dredge them with a little salt and pepper? Other than that, nice job going by their trademarked techniques as far as the dehydrated onions, and steaming. And another thing that has to be done correctly is, the dehydrated onions soak refrigerated for at least 8 hours in cold water from the beginning. The frozen ones are cooked just like in the restaurant. Right here in Louisville Kentucky. Also a couple of fun facts: White Castle was the first ever food chain. Opened in 1921 in Wichita Kansas with a $700 loan that was paid in full in the first 6 months of business. White Castle is not a publicly traded company. When you work for them they do profit sharing with their employees only. The company does not franchise any restaurants. All of them are owned by Bill Ingram. Passed down from Ingram to Ingram.

I had my first white castle (that I can remember) 55 years ago when I was 5. For decades now, I make what I call "chateau blancs"... using filet mignon sliced very thin, over shallots, on a brioche slider bun (Walmart) with a really good cheddar and sliced sweet baby gherkins.

For making bread, you typically want to use the hook attachment. The attachment you used is intended for cake batters, not doughs. That's why it had a hard time mixing it.

I have been baking Homemade Bread for 50 Years...
Never have I ever put Foil on top... doesn't need it.

I love this video... EXCELLENT JOB...
No Foil needed on the rolls.

I'd add the pineapple-juice separately, after the other wet ingredients.
Guga was probably quick enough to avoid problems but the enzymes in the pineapple will quickly cause the milk to curdle and separate.
Just a tip from someone who's made that mistake before.

I grew up eating fresh White Castle. On their fountain machines they serve Big Red. It is the best tasting soda.

White Castle is credited with making the original slider in 1921. It looked a little different back then. It would be awesome if you recreated that version of the burger!

Not sure if mentioned already, but the instructions for the frozen burgers have changed over time. 'Back in the day' the preferred cooking method (according to box) was to fill pan with water, put burgers ontop of a rack and cover with foil. Thereby steaming them like they should be.

I made some white castle inspired sliders the other day and made my own rolls. It's a lot of effort for a hamburger but totally worth it! I did not freeze mine or stab them, so it is possible to make them without freezing them. (You have to have room in the freezer in order to freeze something flat. My freezer is always 1 corn kernel away from busting open.

I worked there when I was in high school 97-99 and what you did was pretty close to how we did it. In my prime I could load a grill in about 45 seconds. The main thing you missed was the pickle. 😂
