GF CHILI SEASONING RECIPE:
2 TBS chili powder
2 TBS unsweetened cocoa powder
2 tsp dried minced onion
1 tsp dried Mexican oregano or Italian seasoning
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp salt, 1/2 tsp black pepper
1. Add 2 cans of beans to your pot (I like a mix of black beans & kidney beans) rinsed and drained.
2. Brown 2lbs of ground meat & add it to the pot with the beans.
3. Add chili seasoning, 1 cup of corn & 2 cans of diced tomatoes. Mix well & cook for approx 20-30 minutes until nice & hot. Enjoy!
GF CORNBREAD MUFFINS:
1 cup gluten-free all purpose flour (I use Bob's red Mill)
1 cup cornmeal
1/2 cup sugar or honey
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp xanthan, gum, if you were gluten-free flour blend already contains this, omit this ingredient.
1 cup, buttermilk, or milk Kiefer
1/4 cup butter melted, (half stick)
2 eggs
How to make them :
1. Preheat oven to 350°F. Prepare muffin sheet with 12 standard muffin cups or grease.
2. Combine flour blend, cornmeal, sugar, baking powder, baking soda, salt and xanthan gum in large bowl. Whisk, buttermilk or Kiefer, butter and eggs in medium bowl; stir into dry ingredients until well blended. Batter will be thick.
3. Spoon batter into prepared muffin cups filling 1/2 way. Bake 15 to 25 minutes or until lightly browned and toothpick inserted into center comes out clean. I always check mine at 15 min & they're done, all depends on your oven! Cool in pan five minutes; remove to wire rack. Enjoy!
CHEESEY KETO/CABBAGE SKILLET:
1 Cabbage/chopped
1 Onion/diced
1 Bell pepper/diced
2TBS Olive oil
1LB Ground meat
14.5oz Canned diced tomatoes (do not drain)
1tsp Paprika
1tsp Oregano
1TBS Garlic powder
1TBS Onion powder
Salt and Pepper to taste
1cup Cheddar cheese/grated
1. Heat oil over medium heat. Add onions/bell peppers & saute until onions are translucent.
2. Add ground meat and seasonings to the skillet & cook until browned.
3. Add canned tomatoes, cabbage. Cook the cabbage down until it's soft.
4. Sprinkle cheese over top, put the lid on and turn off heat. Allow cheese to melt & enjoy!
