Beetroot Carpaccio

Ingredients:
2 medium beetroot
olive oil
Feta cheese
Walnuts
Salt
Vinegar balsamic glaze
Mint leaves

Method:
1. Cook the beets until they get soft. Cool to a room temperature.
2. Peel the beetroot’s and cut into thin slices. Use mandolin or sharp knife.
3. Put the slices on a plate, drizzle with olive oil.
4. Crumble feta cheese, sprinkle with roughly chopped walnuts.
5. Sprinkle with salt to taste. Drizzle with vinegar balsamic glaze.
6. Garnish with mint leaves and serve.
