dEats🌱
- 60 g (1/2c 1 tbsp) oats (or oat flour)
- 10 g (1 tbsp) cocoa powder
- 1 tbsp sweetener of choice (maple syrup or erythritol)
- 1/2 tsp baking powder
- 1 egg (or flaxegg)
- 85 ml (1/3 cup) milk of choice (I used soy)
Yogurt Filling
- 80 g (1/3 cup) yogurt of choice (I used soy)
Directions⏱
- Add to blender rolled oats, cocoa powder, sweetener of choice, baking powder, egg, milk of choice and process until smooth (oats should become flour). If using oat flour, you can mix all together in a large bowl (no blender needed).
- Let crepes batter rest for 5 minutes.
- Heat a large non stick skillet or crepe pan with little oil or butter over medium heat.
- Scoop 1/3 cup oatmeal crepes batter over the pan and move the skillet in a circular form to spread the batter evenly. Cook over medium heat for 1 to 2 minutes and flip.
- Fill crepes with yogurt and sprinkle with cocoa powder if desired.
