former fruit developer here, here is some lore about it so the 3rd head represents the leviathan. The leviathan was a dragon many many years ago and the king that fought it sliced it with a whimsical blade that chopped off the wings and the dragon fell to the water and then it got struck by a cold windy strike preserving it and through aging it eventually healed and adapted to the cold frozen waters forming the leviathan now shows as the 3rd head :)

Actually the heads are venom transformation I think so we having a venom rework because all fruit that didn't get model change in update 20 will get a rework I think

I think that the hydra is based on the 3 headed venom transformation cuz the new hydra leader uses venom so it makes sense that his territory to be a hydra like him
