Haitian Epis can be used as seasoning for any dish.

Recipe
2 Leeks
1 Green bell pepper
1/2 Yellow bell pepper
10 Garlic cloves
1 Yellow onion
5 Sprigs of thyme
5 Scallions
1 Habanero pepper
1/2 Cup parsley
1/2 Cup water
2 Tsp salt
2 tsp pepper
1/2 tsp ground cloves
1 Tbsp chicken bouillon
1/4 Cup oil
-Add all ingredients to a blender and blend until smooth.

Epis is made with oil and vinegar primarily, not water. The vinegar acts as a marinade that penetrates meats and fish or whatever.

In jamaican its called green seasoning, in Puerto rico its called sofrito, and dominican its called sazón liquado 😂 slightly different ingredients but all green at the end 😂
