Fluffy Soft Potato Bread Rolls

These rolls are fluffy soft and rich with flavor! The star ingredient - Potato!

1 1/2 cup warm water (reuse water from boiled potatoes)
1 tbsp yeast
2 eggs
1/2 cup granulated sugar
2/3 cups butter, melted
1 1/4 cup mashed potatoes
1 tsp salt
6 cups all purpose flour
1/4 cup extra flour for kneading

Bake in a preheated oven at 350° for 25 minutes. Brush with melted butter halfway through baking, and brush again when rolls are out of the oven.

These rolls keep soft for several days. Enjoy!

What can be used in place of eggs.

Will this work if you just let it rise to double in size, then shape into rolls and rise again and then bake the same day?

How many grams/cups of whole wheat flour for the recipe instead of all purpose flour but still keep the same soft texture. Thank you a lot.
