Hello Friends, here is the easiest most delicious blueberry cake...no eggs or oil! We are all looking for ways to save our eggs and oil, as they are insanely priced these days. These are the quickest cakes and they are moist and decadent.
Recipe
Preheat oven 350 degrees
1 cake mix white or yellow
10 ounces any berry, plain, or vanilla yogurt
8 tablespoons (1/2 cup) applesauce
2 to 4 tablespoons water
1 cup fresh or frozen berries(not needed, but so good!)
If you don't have apple sauce just use water in its place
Mix everything and bake in your pan of choice, will take 25-35 mins
Frosting
1/2 block cream cheese (4 oz)
1/2 stick (4 tablespoons}Margarine or butter (room temperature)
dash of salt
1 teaspoon vanilla
2 to 4 teaspoons milk
For a chocolate cake mix use vanilla or plain yogurt, I have used strawberry yogurt with the chocolate cake and it is delicious! You can add chocolate chips to the batter.
For spice and carrot cake mixes use vanilla or plain yogurt, You can add 1 cup of chopped apples and/or raisins, nuts and even shredded carrot to these mixes, so yummy!

I'm going to have to make that! Yummy! I had to make an emergency trip to California and I know I have some lemon yogurt in my fridge that will be expired when I get home. This will be the perfect way to use it. Thank you!

This looks so so yummy!! I will for sure be adding this in our “treat” rotation!! Thank you so much!!
I’ve also a good yogurt recipe that I use to make bagels! They are low calorie bagels and good for those trying to lose weight! I make these for my husband! This does have an egg in it but you DO NOT have to include an egg!! In fact, the original recipe does not have an egg!!

-Dough recipe for low calorie bagels (they taste amazeballs by the way!!)-

-1st, preheat your oven to 375-
Next let’s make the dough… so take

-3/4 cup plain Greek yogurt (use whatever yogurt you have! If it’s to watery, you can always add flour 1 tbs at a time!!)
-1 1/8th cup of self rising flour
-1 egg (remember, you do not have to add the egg but it does make it more bagel like!)…
Mix your ingredients well, slowly incorporating the self rising flour to the egg and yogurt mixture … knead the dough just enough to become smooth, you don’t have to knead it long at all!
Separate the dough into 4 balls…. Let rest covered in plastic wrap while you do the next step…
Put a pot of water to boil on the stove with 1 tbs of baking soda …
Once your pot of water is to the boil…. Take your flour balls and roll them into thick 3/4 inch ropes.. take the ropes and pinch them together to make the classic bagel shape… drop one or two at a time in the gently boiling water… boil each side for 30 seconds…
They do puff up when boiled so don’t do to many at once!!
After both sides have been boiled, put them on a cookie rack to dry for a few minutes… just a few minutes is all that’s needed…
After all bagels are boiled and dried… place on a parchment lined cooking sheet … you can now do an egg wash if you want (you can also use milk if you have no egg!!) we love “everything but the bagel seasoning (you can now get that at the dollar store!!) but you use whatever you like! … bake at 375 in your pre heated oven for 25-30 minutes! You can turn the heat up to 400 after the 30 minutes is up and cook for an additional 5 minutes if you want more color!
You’re going to love these bagels! They’re so good and taste much better than store bought! You can even mix in fruit to your dough if you want or even nuts! The sky is the limit!!
I really hope everyone tries it!
I’m sorry I can’t give credit as to where I found the original recipe!! I’ve been making this for years! My gran was whom showed me this and she passed away in 2005! I’ve no clue where she got it!!
Much love to all! ❤️💕❤️💕

Looks delicious! Some grated lemon peel would be good in the frosting.

I used plain yogurt in place of egg in my meatloaf. Wasn't sure it would work but didn't want to use my eggs up. I used 1 egg and about 1/2 c yogurt and 2lbs ground (leftover meatloaf!) I use oatmeal in it as well. Came out great!

Great tip about the berries! I am so going to make this. Loved Amy’s taste testing. The way her face lit up after that first bite really lets you know how good it was. 💖

Of course I’m going to watch even though I’m carnivore now and I’m down 18# down 4-1/2” waist and 4” in hips.

I do the same with yogurt lol. I also pour the water off and keep eating past the date. ❤

Edit: I can have the cream cheese and butter 🤣🤣 it looks super scrumptious Ashley.
