Very late to the party but I did find bowser castle 3 and daisy circuit to be the easiest maps it might be just me tho

i accidientally beat a expert staff ghost thinking it was the normal staff ghost in luigi circuit... it was hellish but i eventually pulled it off just to realize i didnt need to do that.

If the game doesn't tell you that you unlocked a fast staff ghost, if you di a 5 second lead thats all that matters
