Nina also has that slap reversal but it's like the Tekken 5 version where the 2nd hit can wall splat.
Williams should also get special mention of their unique reversal animations. Yoshi's left arm, King's high unblockable, and Demon Scissors

You missed Master Raven. She has a reversal where she says "I'm over here" after evading. I think its against Nina's slaps or moves specifically.

Not sure if this counts, but Kazuya can nullify Akuma's fireballs with his EWGF. Yoshimitsu can too, I forget which move exactly but he uses his spinning sword as a shield.

one of my favourite longstanding ones (i think, it's at least from t6) is when paul's fighting law he can attempt (and fail) law's somersault kick. it still does damage but he lands on his face. in tekken 7 i think it's just a hidden move usable against anyone, and it's also one of his win animations

The only thing I might add is some of the unique sound effects done from some moves. For example, Bryan will make some of his sounds when being stomped in the crotch by the Williams sisters or certain throws like bear circus throw.

I wanna note that Lei also has a special interaction with Lucky Chloe when he breaks her 2+4 generic throw.

If Jack does volcano throw df, df 2+4 on Bryan, he laughs as he is thrown.

Paul can punish King and AmK frankensteiner throw, and powerbombs them instead, I thinks it’s his counter b, 1+3.

Immediately after a ki charge, Amk can do the unblockable fire version of his mist move by inputting the move, cd 1+2.

The arm break throw that certain chars do after punching during an ultimate tackle can be countered by pressing this during the animation: 1+2, 2, 1+2, 2, 2, 2

M.Raven can ki charge immediately after pressing u, 4…d, 4 hold d.

Not sure if it’s in T7 but in previous Tekken’s since 5, Raven has a hidden move where he could duplicate himself into two, one in front and one at the back
