Airfryer Rock Cakes: budget friendly ~ only 10p each!

Thank you Alan and Ella for suggesting Rock Cakes to try, who knew their history (prob a lot of you lol) but it was new to me. The Ministry of Food heavily promoted rock cakes because you didn't need a lot of sugar and only 1 egg to get your sweet fix and a lot of people, with rationing, would have been craving a sweet fix!

Rock cakes to me, bring up images of Rubeus Hagrid in his hut at Hogwarts, asking Harry, Ron and Hermione if they would like one, I think they only tried one once where there was an ominous cracking of teeth. Thankfully mine were not teeth cracking and were really lovely, with the addition of dried fruits (left over from the xmas cake).

Rock Cake Recipe

300g Plain Flour 
1.5 tsp Baking Powder 
80g Sugar (granulated) 
    plus extra for dusting
150g butter/marg 
100g Sultanas/Dried Fruit (comment suggestion: soak fruit in hot tea overnight - drain liquid before using)
1 large Egg 
1 tbspn Milk 
1/2 tsp Mixed Spice 
Pinch of salt

Method:
Add Flour, sugar, salt, baking powder & mixed spice to a large bowl, mix
together.  Add butter/marg & rub
together until it resembles bread-
crumbs.  Add sultanas/dried fruit to
dry breadcrumby mix. Stir through.
Whisk egg & milk together in a seperate bowl, add egg/milk mixture to rock cake mix and mix well together.

Using wet fingers, portion out small
rough balls and place onto parchment paper in Airfryers. Bake setting 180c/350f for 10/15 mins (turn halfway!). Once cooled, Enjoy!

My mother used to make these years ago. I am 66 so I remember them 60 odd years ago...By the time I was 9, I was making them with my mum.Loved them with butter on. Lovely memories.Put 2 eggs in sweet heart and a drop more milk

Look delicious! You are so down to earth. I have been baking for years. I put a bit of citrus zest in dough or on top before cooking. Lemon or orange zest. Enjoy

I have made these for many years, from my Mums recipe. Her recipe says to sprinkle with Demerara sugar before baking. I have never tried baking them in the air fryer, but will give it a go. 😊

Rock cakes are a cheap, quick and lovely bake. Best still warm with a pot of tea - still love them after decades of making them.

Some suggestions if I may:
Its easier to melt the butter, then just stir it in with the egg. Try with candied peel or chopped apricots, and orange or lemon zest. Or even sultanas soaked in rum, with cinnamon for the spice
Finally, don't turn the cakes over, it dries them out too much.

Thanks Kerry, these remind me of my mum she used to make these when I was young to keep them rockey you use to big spoons and the larger ones are the perfect shape and to enjoy them at there best slice them with a bit of butter and a nice cup of tea the perfect afternoon tea ...happy days ..xxx

Hi Kerry - loved seeing rick cakes being made! Havent seen them for years.

Not sure if anyone has said this before, but when converting oven instructions to air fryer, general rule of thumb is to take 20⁰ off the temperature and 20% off the cooking time. Hope this helps 😊

Hi Kerry it’s a good idea to soak dried fruit in hot tea, just enough to cover for about 10 minutes it makes them plump and juicy drain before use💐

Hello Kerry I just made these today, they came out lovely crunchy outside light n fluffy inside. I'm in love with my little cosori 12 litre oven I put them on two trays so kept an eye on them and swapped over half way. 😀👍🏼👍🏼👍🏼 forgot to add the last time I made rock cakes I was about ten years old, seventy now, lol.💝
