Ingredients:
Green or Brown Lentil Beans
Garlic
Sweet Onion
Black Pepper
Sea Salt
Bay Leaves
Fire Roasted Diced Tomatoes
Low Sodium Chicken Broth
Fresh Parsley
Carrots
Celery

Exact Measurements:
16 Ounces Lentil Beans
1 teaspoon Minced Garlic
1 Small Sweet Onion (finely diced)
1 teaspoon Black Pepper (more if needed)
1 teaspoon Sea Salt (more if needed)
2 Small or 1 Large Bay Leaf
1 14.5 oz Can Fire Roasted Petite Diced Tomatoes
7 Cups Low Sodium Chicken Broth
1 Tablespoon Fresh Parsley (chopped)
2 Large Carrots (Diced Small)
2 Celery Stalks (Diced Small)

Instructions:
Pour the dry lentil beans into a large bowl. Add enough cold water to the bowl to cover the beans. Carefully sort through the lentil beans and remove any beans that look bad and remove any loose husk from the beans. Drain the water and repeat this process a few times until you have removed all the bad beans. Pour the cleaned lentil beans into the crockpot along with all the other remaining ingredients except for the fresh parsley and incorporate well. Cook the lentil beans on low for about 8-10 hours or on high for about 6-8 hours or until the lentil beans are tender. After about 4-5 hours of cooking taste the soup to see if you prefer to add more salt and pepper. 30 Minutes before the crockpot lentil soup is done add the fresh parsley and taste one more time to see if more salt and black pepper is needed. Place the lid back onto the crockpot and allow the crockpot lentil soup to continue to cook. Once the beans are done turn off the crockpot, remove the lid and both bay leaves.
