TIPS:
You can change the UI to make the ads more smaller
You can use chests to store permanent items like rewards from the quest master
You can use seeds that have been modified so that the stronghold is more closer to the spawn or some other structures like villages and stuff

I genuinely love how every single video that was appeared with Fundy's annoying difficulty has only included: attempted, tried, played or almost. So we know they haven't beaten it but we still watch it because we like to watch people suffer.

You could try entering the end with a few water buckets and try to spawnproof gor enderman, if it doesn't work, then just buttons or slabs should do the trick.
