Almost everyone else I have seen counts the ram from left to right and would consider those slots 2 and 4.

Before putting a lot of pressure on your RAM sticks, make sure they are oriented the correct way. On the bottom of the sticks there will be a small slit that will fit only on one side of the ram slot; pushing too hard with it incorrect will break your RAM stick.

Easiest upgrade is a NVMe drive IMO, as long as it doesn't have a heatsink or is behind the GPU

RAM is by far the easiest to upgrade. You just take out the old one, and put in the new one. Everything else is complicated.

It is the RAM until you start searching for it and then understand that timings matter, frequency matter, then you'll find that CPUs IMC might be a limiting factor when it comes to how high the frequency can be. Then you'll find that the motherboard matters too.

What is the benefit of running 2x16gb ram rather than 4x8gb? I feel like every build I see uses only 2 of the 4 slots.

So if I have 4 ram slots...and your telling me to run in 1 and 3...much like an amplifier being bridged...wouldn't it be better to just buy 4 ram sticks and utilize the whole thing?

Easiest to replace, ? Well thats debatable and circumstantial. If you have a large cooling tower on your cpu that overlaps the ram, you now have to remove either the fan or the entire cooler just to access the ram, the latter now requires repasting. You may encounter boot failure, forcing you to run only one stick until you configure bios. You may need to enter bios and find xmp or expo settings to get correct ram speed. This can be simple or burried in the settings depending on the manufacturer and bios.
Gpu may be arguably easier. Couple screws, unplug power cable, pop out old card, reverse order to install. Then its a matter of deleting old drivers and installing the new driver.

Bad advice on the ram because it is different on different boards. Seen a lot of slot 2/4 boards these days.
