White Christmas | Roving Haggis

🎄🏴󠁧󠁢󠁳󠁣󠁴󠁿 WHITE CHRISTMAS 🏴󠁧󠁢󠁳󠁣󠁴󠁿🎄

I think most of us grew up with some version of a Rice Crispie/Rice bubble no bake slice! One of my fave childhood snacks, ours was made with highland toffee and marshmallows, then a friend here in Australia told me about this Aussie festive slice and it brought back all the memories! My daughter is home from London so we are having a family Christmas in Australia so it felt right to kick of my festive recipes with us ‘Scaussie’ adaptation of my favourite slice!

Makes 24 squares
80g chopped pistachios
80g chopped craisins
200g mini white marshmallows
180g white chocolate
120g Rice Bubbles
100g Copha (or coconut oil)
35g shredded coconut
Good pinch of salt

Add your Copha or coconut oil to a large pan and heat till melted. Take off the heat and add the chocolate and mallows, put back on a low heat and stir till melted and combined. Take off the heat and add the salt, Rice Bubbles, craisins, pistachios and shredded coconut. Stir to combine then press into a greased tin (20 x 26cm) press flat with a spatula pressing up to all the corners, then sprinkle with shredded coconut and press on. Leave to cool, it doesn’t take long then press out the tin and using a sharp knife, cut into squares.

A final snowy sprinkle of shredded coconut and get stuck in. A white Christmas that can be enjoyed whatever side of the world you live on 🎄🥰🏴󠁧󠁢󠁳󠁣󠁴󠁿🇦🇺
